Almond-stuffed Dates

I happen to love the texture and taste of dates. They are a tidy little package when stuffed with cream cheese as an appetizer or with icing and nuts as a 'sweet' for a dessert tray.

Ingredients:

- Medjool dates from the produce section of your grocery store
- butter icing left over from cookie decorating
(See post dated Dec. 6, '09 for the icing recipe)
- whole almonds

Slice each date down one side with a sharp knife and remove the pit. Open the date up slightly to allow about 1/2 to a full teaspoon of icing to be placed in the cavity of the date. I used the end of a dinner knife to do this. Push an almond into the icing. Store the stuffed dates in a cookie tin in the refrigerator.
