Glazed Citrus Bran Loaf

My sister Penelope sent me this recipe a couple of years ago, and no, her husband's name is not Odysseus. 

I'm recycling the recipe for the blog because I absolutely love the oranges that I used in this photo....bought them because they were so brightly coloured and had leaves attached to the stem.

It's great to have this loaf at a coffee or tea break, or for breakfast. 
 
Ingredients:
- 1 egg
- 1 cup of milk
- 1/2 cup of butter melted
- 1 tablespoon each of grated lemon and orange rind
- 1 cup of bran cereal (like All-Bran or Bran Buds)
- 1 and 1/2 cups of all-purpose flour
- 1/2 cup of granulated sugar
- 1 tablespoon of baking powder
- 1/2 teaspoon salt

Glaze Ingredients:

- 1/3 cup of granulated sugar
- 1 tablespoon each of lemon and orange juice

Preheat your oven to 350 degrees F. Blend the egg, milk, melted butter, orange and lemon rind together in a mixing bowl. Stir in the bran cereal and set aside. Combine the flour, 1/2 cup of sugar, baking powder and salt in a large mixing bowl, then add the liquid mixture and stir everything just until blended. Pour into a greased loaf pan and bake for 55-60 minutes or until a toothpick inserted into the centre of the loaf comes out clean. While the loaf is baking, bring the 1/3 cup of sugar and the citrus juices to a boil in a small saucepan; this forms the glaze. As soon as the loaf is baked, use a skewer or toothpick to make multiple small holes in the top of the loaf, then spoon the glaze over the loaf allowing it to soak in. Cool the loaf in the pan, then remove it to slice and serve.

Editorial Note: Penelope  is a female name of Greek origin meaning  "weaver".  In Greek mythology, Penelope, wife of Odysseus, fended off suitors by weaving  during the day and unraveling at night a tapestry she said had to be completed before she would wed another husband. Sounds crazy-making to me.
