Short-cut Lemon Tarte

I made the pastry with a blend of all-purpose and whole wheat flour, which gave the tarte shell a certain je ne sais qois.
Some of you may recall a lemon tarte recipe posted. Nov. 18, 2009.....very French, very fancy. Here's one that is significantly easier to make, tastes just about the same and does not involve the purchase of a lot of anything.

The last time I visited, my local grocery store had jars of ready-made lemon curd on sale; this was too tempting to pass up. Plus, I just happened to have a disc of pastry sitting in my freezer. (See post dated Oct 12, 2009 for instruction on making good old Canadian-style pastry). Put the two together and you have a lemon tarte.

Ingredients:

- enough pastry for a single bottom crust
- 2 bottles of ready-made lemon curd- about 2.5 cups

Preheat your oven to 400 degrees F.

Roll out the pastry to form a circle slightly larger that the bottom of a 9.5 inch pie plate or tart tin. Fit the pastry into the baking dish, ensuring that the edges go up the sides about an inch. Cover the pastry with a piece of tin foil and fill the foil with dried beans; the weight will keep the pastry from puffing. Bake for about 10 minutes, then remove from the oven briefly while you lift off the beans and foil. Turn the oven down to 375 degrees. Prick the pastry all over with the tines of a fork, and return it to the oven for another 10 to 15 minutes or until it's thoroughly baked and a light golden brown in colour. FYI: the pastry will likely have shrunk and slightly pulled away from the edge of the baking dish at this point.

Fill the baked pastry crust with the lemon curd. Refrigerate until ready to serve.

Editorial note: Fresh fruit such as strawberries, raspberries, cherries or blueberries would look very elegant if arranged on top of this lemon tarte.

Dare I try to make a fancy design on top of this tarte with a paper doily and confectioner's sugar? It depends on whether I can find a doily in some random drawer in my house; am not going to the dollar store.
