Changing up the Lemon Curd

Food for Thought follower Christine used the lemon curd recipe, (originally posted 18/11/09), with tart shells that she had purchased at the grocery store and pre-baked. She filled the baked shells with lemon curd and popped them in her remarkably clean oven for a final 5 minutes before presenting the tarts to suitably-impressed friends at a potluck.

Other Uses:
- The lemon curd would make a great filling for a layer cake.

- I seem to recall that my Aunt Dorothy made a delicious dessert by pouring warm lemon curd over bite-sized chunks of angel food cake. She would let this cool and set, then top the whole thing with lots of whipped cream.

- Here's a gift idea: Make the lemon curd and transfer it to a clean canning jar (also known as Mason jar), decorate the lid, and use as a hostess gift. Just make sure that you refrigerate the jar of lemon curd until the point of giving it away and provide the recipient with a 'best before' date, ( which reasonably would be several days after you made it ). You could also attach a recipe for using the lemon curd ; perhaps for something elegant, like Tarte au Citron.
