Low Fat Friday Night Chicken Dinner


Ingredients:

- 12 skinless chicken drumsticks
- 2 tablespoons Dijon mustard
- 1/4 cup lemon juice
- 1/4 cup liquid honey
- 1 teaspoon curry powder
- 1/2 teaspoon salt

Combine all the ingredients (except the chicken) in a large bowl to make a marinade. Add chicken to the marinade and place in the fridge overnight. When ready to cook, preheat oven to 375 degrees. Remove the chicken from the bowl and place on a shallow baking pan. Bake for 1 hour, basting occasionally with the remaining marinade.

Editorial Note: This recipe was adapted from one I found in the November '09 issue of "O" magazine. If you can't find skinless chicken legs, buy the ones with skin and do the deed yourself. I served this chicken with rosemary foccacia and a Caesar salad made with Tannis'dressing (see post dated October 27, 2009). To make croutons for a guest requiring a gluten-free diet, I cubed rice bread (available in many grocery stores), dredged it with bacon fat, then toasted the bread in the oven until brown. Okay, so maybe the croutons were not low fat.
