Feedback from an experienced roaster...
There were two steps you forgot to include when roasting filet mignon at 425 - you need to turn on the exhaust fan and disable the smoke alarms. I have roasted filets a couple of times, typically for big events, like Christmas Eve or Thanksgiving, where I have smoked everyone out of the house....maybe its ok if your oven is pristinely clean...but fat hitting a pan at 425 smokes.....
I'd love to find a filet recipe cooked on low heat to avoid this problem. Do let us know how it turns out! Jude
