Condiment Condo (my refrigerator)

We tend to like condiments and pickles in our family. We may run low on 'the basics' but there will always be a nice jar of chutney or Dijon mustard in the fridge.


My sister S. makes a great chilli sauce. The recipe originated with sister P.

Ingredients:
4 large cans diced tomatoes or about 12 cups diced skinned tomatoes
(Use the canned tomatoes; it cuts way down on the cooking time)
3 cups finely chopped onion
2 cups finely chopped red bell pepper
2 cups white sugar
1 cup brown sugar
3 cups cider vinegar
1 tsp salt
1 tsp dried chilli pepper flakes
4 tbsp pickling spice, about a 1 tsp cloves and 1 stick cinnamon, broken, tied in
cheesecloth bag
6 oz can tomato paste


Put tomatoes, onions, peppers, chilli pepper flakes, sugar, vinegar salt and spices in a large kettle. Cook slowly for about 2 hours, then stir in one large can tomato paste and cook another 20 minutes or so until thick. Remove cheesecloth bag of spices. Pour into hot sterile jars and seal. Sister S. says that she doesn't actually measure very much, so this turns out a little differently every time.

It tastes like a spicy country ketchup. Homemade foodstuffs like this makes great hostess gifts and holiday presents.
