Homemade Pizza- the very easy way

While there is nothing quite like a take-out pizza, sodden with cheese and redolent of steamed cardboard, I often opt for the less calorific option of homemade pizza. And I use an already prepared and baked pizza crust. These things are readily available at most grocery stores, (in the bread section), and make a completely acceptable version of pizza. Hard core foodies and true pizza aficionados can avert their eyes if they want to at this point.

My easy peasy pizza, ready to pop into a hot oven.

Ingredients:

- pre-made pizza crust
- a base of tomato sauce, or pesto, or tomato paste, or olive oil to cover the crust of the pizza
- any number or combination of things you prefer as a topping: sliced onions (green, white or caramelized), olives, peppers, leftover (cooked) bacon, ham, or chicken, salami, anchovies, mushrooms, sliced tomatoes, fresh basil, sea salt and pepper, chili flakes
- any type of cheese in grated, chunked, sliced or shredded format. In this case, I used chunks of chevre.

Instructions:

Pre-heat your oven to 350 degrees F. Place the pizza crust on a baking sheet and spread your preferred base sauce over the crust, then pile on whatever ingredients you fancy and finish with some cheese. Bake for 10-15 minutes until the vegetables are wilted and the cheese has melted.

When the pizza you see above had baked, I took it out of the oven and covered it with arugula, then sprinkled on some Balsamic vinegar and tucked in.
