Blueberry Buckle

We are lucky to have many friends who are great cooks. When we were invited to a friend's house for dinner last night, we struck it rich. Here was our lucky dessert.
                             
Blueberry Buckle...it just sounds good.
 Batter Ingredients:                      
  • ¼ cup of softened butter
  • 3/4 cup of white sugar                                 
  • 1 egg                                                                        
  • ½ teaspoon of lemon extract                              
  • ½ cup of milk
  • 2 cups of flour
  • 2 teaspoons of baking powder
  • ½ teaspoon of salt
  • 2 cups of fresh blueberries
Topping Ingredients:
  • ½ of white sugar
  • 1/3 cup of flour cup
  • ½ teaspoon or more of cinnamon
  • ¼ cup of softened butter         
Preheat your oven to 375 degrees F.  Grease an 8 x 8 inch square pan. Cream  the ¾ cup of sugar, egg, butter and lemon extract. In a separate bowl mix 2 cups of flour, the baking powder and salt. Stir these dry ingredients into the sugar/butter mixture, alternating with the 1/2 cup of milk. Stir in the blueberries, then pour the batter into the greased pan.
Combine the topping ingredients in a separate bowl and sprinkle over the cake batter.

Bake for 25 to 30 minutes.
