Torrone


What we know in Canada as nougat is known as Torrone in Italy. Many varieties exist, ranging widely in texture and flavour from one region to the next. Nougat is basically a confection made of honey (or boiled sugar and corn syrup) and egg whites, flavoured with things like fruit extracts or vanilla. Frequently, nuts are added to the mix and the final sticky product is wrapped in edible rice paper. The examples you see in the photo above were in a sweet shop in the town of Assisi, hometown of St. Frances. I suspect you've heard of him.
