Yum. Rum Cake

My friend Janice served this deliciously moist and rummy cake at the end of a Bahamian meal this past Saturday. Yay. Here's a copy-and-paste link to the recipe.

Janice intelligently used a round pan, (lined in parchment with sides and bottom oiled and dusted with flour), rather than a tube pan to bake this cake. I refer you on this particular issue to my chocolate-Guinness-cake-bundt-pan-incident.  At any rate, the round pan worked just fine and took the same time to bake. As I say, an intelligent choice.
