Banana and Nutella Muffins

Yummy and swirly and out of focus. The bricks on the red building behind are pretty clear though.
This extremely well-organized recipe for delicious Banana and Nutella muffins comes to me by way of Alyson who found it on a website entitled the Organized Housewife. Not a concept I subscribe to.

Ingredients:
  • 2 cups self-rising flour
  • 1 tsp baking soda
  • 4 medium over-ripe bananas
  • ½ cup sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • ¼ cup vegetable oil
  • 2 tsp vanilla extract
  • ½ cup pecans, chopped
  • 12 tsp Nutella ( That wildly delicious combo of hazelnuts and chocolate...it's Italian of course)
Instructions:
  1. Preheat oven to 180C
  2. Line a 12 hole muffin tin with muffin liners
  3. Place banana’s into mixing bowl
  4. Using whisk attachment, whisk bananas on medium speed until mashed
  5. Add sugars, mix together
  6. Add in eggs, oil and vanilla, mix together gently
  7. Place flours and pecan into mixture, gently combine
  8. Spoon mixture evenly between muffin holes
  9. Place a tsp of nutella on top of each muffin
  10. Use a skewer or toothpick to swirl into batter
  11. Bake in oven for 15 minutes or until golden
