Triple Fibre Muffins- Does it get any better than that?


My sister Sylvia created this recipe on a grey December Day. It's for all you fibre junkies out there. 

Ingredients:
  • 2 cups all bran cereal
  • ¼ cup oat bran
  • ¼ cup ground flax
  • 1 cup spelt flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ cup brown sugar
  • ¼ cup maple syrup
  • ½ cup unsweetened applesauce
  • 2 eggs
  • 1 cup plain yogurt (I used goat’s milk yogurt)
  • ¼ cup vegetable oil

Preheat your oven to 350 degrees F. Mix together the eggs, sugar, salt, oil, yogurt, maple syrup and applesauce. Stir in the bran cereal, then let the batter sit a couple of minutes. Next, stir in the oat bran and flax meal. Add baking powder to the flour and stir. Fold flour into the wet ingredients until just combined. Fill muffin cups half full. Bake for about 15-18 minutes.
