Sweet Potato and Black Pepper Biscuits

Combining orange vegetables and scones....two of my favourite things. These biscuits go well with soup or stew.

Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon sugar
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup (1 and 1/2 sticks ) of butter, softened to room temperature
- 1 cup of cooked pureed sweet potato ( use a leftover baked one; remove the skin and mash)
- 2 tablespoons heavy cream

Preheat your oven to 425 degrees F. Combine the flour,baking powder, sugar, pepper, baking soda and salt in a medium sized bowl. Add the butter and blend with your fingertips until the mixture resembles coarse crumbs. Stir in the potato and cream until the dough is soft. Knead on a lightly floured board about 5 times then roll the dough to about 1/2 inch in thickness. Cut into rounds with a biscuit cutter or use a mason jar lid to mark the dough so you can cut a circle with a sharp knife. Bake for 12-15 minutes, until lightly golden.
