Banana Cream Pie

My sister made this beautiful banana cream pie for my father. I love the photo because it is so absolutely clear what my Dad was about to have for dessert....potassium in a pie.

Crust Ingredients:
- 1 cup ground cookie crumbs and 1 cup graham wafer crumbs, or 2 cups graham crumbs
- ½ cup ground walnuts
- ¼ cup butter, melted
- 1 tbsp brown sugar

Filling Ingredients:
- 2 cups of vanilla custard or pudding
- 2 to 3 ripe bananas
- enough whipped cream to cover the pie

Preheat your oven to 350 degrees F. Mix all of the crust ingredients well and then press the mixture into the bottom and up sides of glass pie plate. Bake at 350 for 10 minutes. Cool.

When baked and cooled, cover the bottom crust with a layer of sliced bananas. Top the banana layer with 2 cups of vanilla custard or vanilla pudding. (Alternatively, you can use banana or butterscotch pudding). Cover the pudding with a second layer of sliced ripe bananas, then cover the whole thing with whipped cream.

Refrigerate the pie until ready to serve, then go bananas.

Editorial Note: Bird's makes a great custard powder. It is sold in a tin in most grocery stores.
