Simple Sautéed Potatoes and Onions


This recipe is for my friend K. Today I learned that she is not fond of vegetables. This is to remind her that onions are vegetables and pretty tasty ones at that.

Wide-ranging claims have been made for the effectiveness of onions against conditions ranging from the common cold to heart disease, diabetes, osteoporosis, and other diseases. Onions contain chemical compounds believed to have anti-inflammatory, anticholesterol, anticancer, and antioxidant properties. For all varieties of onions, the more phenols and flavonoids they contain, the more antioxidant and anti-cancer activity they provide.

There are 4 ingredients in this recipe: leftover boiled potatoes, a large onion, olive oil and salt.

Add about a tablespoon of olive oil to a skillet on medium heat. Peel and slice a large onion and place in the skillet to brown. Slice several boiled potatoes in 1 cm slices and add to the skillet with the onions.
( I had small potatoes to use up so simply cut them in half). When everything is browned to your liking and heated through, sprinkle with some coarse salt.

The great thing about this 'recipe' is that it uses up leftovers and makes your kitchen smell fantastic.

Well! A guest appearance in your blog! You certainly know how to get a girl to comment. Thanks for the suggestion... and there we go. A vegetable I will eat. Now to search for 5 more... as I doubt Jonathan will let me eat more than 1 onion each day! ;)
