
From the cookbook Bite Me, here is an innovative and kind-of wintry way to serve asparagus. It looks like they are wrapped in snug little blankets.
Ingredients:
- 3/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 teaspoons fresh lemon juice
- 1 teaspoon kosher salt
- 1 and 1/2 cups Panko
- 3/4 cup freshly grated Parmesan cheese
- 2 large bunches of asparagus
- 2 tablespoons olive oil
Preheat your oven to 450 degrees F. then coat a large baking sheet with non-stick cooking spray. In a large bowl, whisk the mayo, mustard, lemon juice and salt. On a large plate, combine the Panko and Parmesan. Dip each stalk into the mayonnaise mixture, followed by the Panko mixture. Place the stalks on the baking sheet and sprinkle them with olive oil. Bake for 14-16 minutes, turning the asparagus halfway through cooking. Sprinkle them with coarse salt before serving.
Editorial Note: Panko are Japanese breadcrumbs.They are available at most grocery stores.
