
Cookie Ingredients:
- 1 and 1/2 cups sugar
- 2/3 cup shortening or butter ( or a third of a cup of each)
- 2 eggs
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 3 and 1/4 cups flour
- 2 and 1/2 teaspoons baking powder
- 1/2 teaspoon salt
In a large bowl cream the shortening and the sugar. Add the eggs, extract, and milk. In a medium bowl mix the dry ingredients together then add them to the large bowl. Mix with an electric mixer until well combined. Use your hands to shape the dough into 3 flattened disks of dough. Wrap with plastic wrap and refrigerate for at least a half an hour. When you are ready to bake the cookies, preheat your oven to 400 degrees F. Cover your cookie sheets with parchment paper. With a rolling pin, roll 1/3 of the dough at a time, while keeping the rest refrigerated. For crisp cookies, roll the dough very thinly. For softer cookies, roll from 1/8 " to 1/4" thick. Use a cookie cutter to cut the shape you prefer; in this case I made lips. (Thanks for the awesome cookie cutter Jude!) Re-roll the trimmings and cut more cookies.
Place the cookies 1/2 inch apart on cookie sheets. Bake 8 minutes or until very light brown. Remove the cookies from the pan to racks to cool. When cool, the cookies can be iced and decorated. This recipe makes a lot of cookies.
