Chunky White Chocolate Cranberry Cookies

Another recipe from Bite Me , the saucy sister cookbook. I have never been a huge fan of white/fake chocolate but I have to say that these cookies have made me a convert.


Ingredients:

- 1/2 cup of butter, softened
- 1/2 cup of granulated sugar
- 1/2 cup of packed brown sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 and 1/2 cups of flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1 and 1/2 cups of white chocolate cut into chunks ( I used a small bag of chips)
- 1 cup of dried cranberries (or dried cherries if you can find them)

Preheat your oven to 350 degrees F. Line 2 baking sheets with parchment paper. Cream the butter and sugars, then add the egg and vanilla and beat until fluffy. Add the flour, salt and baking soda and mix on a low speed until the flour just disappears. Mix in the cranberries and chocolate using a wooden spoon if necessary. Drop heaping tablespoons of dough on the prepared baking sheets and bake for 10-12 minutes or until the edges begin to brown. Cool the cookies on a wire rack. Makes 16 large cookies.
