
In spite of their name, these "cookies" are not quite as pedestrian as you might think. My friend Judy likes them; this recipe is for you Jude.
Ingredients:
- 1 cup of butter
- 1 teaspoon salt
- 1 and 1/2 cups of white sugar
- 1 cup of pitted chopped dates
- 1 teaspoon vanilla
- 2 eggs well beaten
- 2 tablespoons of milk
- 4 cups of crispy rice cereal (otherwise known as Rice Crispies)
- about 3 cups of coconut for rolling
- 1 cup of chopped nuts (optional)
Cook the butter, sugar and dates over a low heat until pasty, about 10-15 minutes. Remove from the heat. Add the vanilla, eggs and milk and mix well. Return to a low heat and cook for 2 minutes. Cool briefly and then add the cereal and nuts. After the mixture has cooled, form one inch balls and roll in coconut. Store in an airtight container.
