Niece #1 recommends these quesadillas ......
Ingredients for 8 large, meal sized quesadillas:
1 1/2 cups finely chopped onion
2 garlic cloves, finely chopped
3 tbsp veg oil or olive oil
4 cups grated sweet potato (about 3 potatoes)
1/2 tsp dried oregano
1 tsp chili powder
2 tsp ground cumin
generous pinch of cayenne
salt and black pepper (to taste)
1 cup grated sharp cheddar cheese
Saute the onions and garlic in oil until onions are translucent. Add grated sweet potato and spices and cook in a covered frying pan for about 10 minutes, stirring often to avoid sticking. When the sweet potato is tender, add salt and pepper to taste and spread 1/8 of filling onto one half of a tortilla- top with 2 tbsp cheese and fold the other half over the filling. Lightly brown the quesadilla on both sides in in a clean saute pan.
Serve with sour cream.
