In the 1960's when few people in Canada believed that cheese could be baked in the oven in the form of a dessert, my mother would make a special no-bake cherry cheesecake when entertaining. We loved it. That was back in the day when dessert names often contained the word "chiffon". My friend Christine is now asking for such a recipe, which I think is very nouveau-retro-chic of her. What follows is my sister P.'s recipe for Pineapple Cheesecake.
Key Equipment for this recipe: a refrigerator
Ingredients:
- 1 box of coconut cookies (crushed)
- 1/2 cup butter
- 1 package of softened cream cheese (250 gram-size, not low fat)
- 1 can of sweetened condensed milk
- 1.5 teaspoons of cinnamon
- a 19 ounce can of crushed pineapple (drained for 20 minutes)
- 3 tablespoons lemon juice
Crust: Melt the butter and mix with the crushed cookies. Press into the bottom of a springform pan, sprinkle evenly with the cinnamon and freeze for 30 minutes.
Filling: Mix together the remaining ingredients and pour on top of the crust. Refrigerate until firm.
Just think of this as a solid Pina Colada.

Thanks!!! I have a question though. What kind of coconut cookies should I use? Is there a particular brand? I've never bought coconut cookies before. Also, feel free to use my first name in your blog, C looks funny to me. :)
No Bake Cherry Cheesecake
2 cups graham crumbs
3 tbsp. brown sugar
½ cup butter or margarine, melted
Mix well, then spread in bottom of 9X 13 pan. Press down well to form a bottom crust (can bake 6-8 minutes at 350 then cool, or just leave as is)
2 pkgs Cream Cheese, room temperature
I can sweetened condensed milk
2 tbsp realemon
I thawed container of cool whip topping, DREAM WHIP dessert topping, or 2 cups sweetened whipped cream
Mix cream cheese, sweetened condensed milk and realemon with electric beaters until no lumps of cheese remain. Fold in whipped topping of choice. Pour over filling crust and spread evenly.
Top with one large can prepared cherry pie filling…the cherries as evenly spaced as possible
(We used to do 3 layers - the cream cheese layer separately first, then the whipped topping/cream over top, then a big dollop of cherry pie filling on each piece after it was cut.)
Chill at least one hour. Cut into 3X3 “ squares.
I remember thinking I'd died and gone to heaven when mom made this dessert!! Do they still make DREAM WHIP, I wonder??
