A Creamy Dessert-Zabaglioni

A reader asked for a creamy dessert that is like Creme Brulee but not Creme Brulee. Not sure if this reader is interested more in the creme part or the brulee part of the dessert but here is a recipe for a creamy alternative. I obtained this recipe at a cooking class that I took about 25 years ago so I have no idea who the original author was.

1 cup whipping cream
3 tablespoons sugar
8 egg yolks (save the egg whites to make an egg white omelette or a meringue)
2/3 cup Marsala or Amaretto

Whip cream until stiff. In a heavy pot or double boiler combine the egg yolks, sugar and alcohol. Over a medium heat, whisk the mixture until thick and creamy. Place the pot over ice and cool slightly. Fold in the whipped cream. Serve in individual wine glasses (serves 6) . Refrigerate. This can be prepared the day before serving.
